I play music, right now I'm in a band called Blackout City and I'd love to say that was my full time gig but its not and probably never will, mostly cause St.cloud MN doesn't have a good music scene, it is run by cover bands here. If I could only count how many times I've heard a band do Last Dance With MaryJane or some stupid Sublime song, its pretty pathetic that musicians in this town can't write their own music. St.cloud is a college town so you would figure there would be more open minded college kids that would want to hear original music but NO! just the shit they hear everyday on the radio its so lame and we even have a great college radio station KVSC 88.1 that really only plays great underground music and that is still not a enough to get a good scene. I also know alot of the scene kids and they don't even go out and support local music... so fuck'em.
So to pay the bills I'm a chef at a supper club. I'm good at it and I hate it.I work there for five years now... shit maybe six, i don't know?the days and years just seem to blend together into a haze of cooking food and drunkin drug out days and nights. At the Water Front I wouldn't say I do any really fancy dishes,I just cook simple food really good and I lead a good staff, my crew rocks. I come in every day an open ( which gets old,fast)I set up the line,I prepare the specials , and get ready to start the night, which usually involves me smoking a one hitter in the freezer. For some people it's hard but not for me cooking is just natural, I guess because I've done it for so long, 14 years off and on with a couple random other jobs in the middle. I mean it sucks on the busy busy nights and anyone who tells you its doesn't is a lier or they suck that bad that they didn't give you anything important to do, but you get through it and have a drink or two after and everything that went wrong that night doesn't seem that bad anymore. Until the next really bad night and I laugh. It's a life I sometime want to get out of, but it's addicting, there is a rush you get when your on line and all these tickets come in and you have to knock'em out as fast as you can, and this is were you find out who's good and who is not, who is slow and who is quick. Take it from me it's way better to have alot of good, quick people working, but im sure that's true in any job.
